cheese, Jalapeno & honey buns

a little bit sweet and a little spicy, all in a soft roll :) original bread recipe from the Great British Bake Off

650g flour

10g salt

7g yeast

425g warm water

2tbsp olive oil

20g butter, soft

fillings

2 cups of grated cheese - i used half cheddar, half jalapeno and red pepper cheddar

1 whole jalapeno or 1/4 cup of pickled jalapenos, chopped

1 spring onion

method

Measure the water into a small bowl and sprinkle the yeast on top. Gently stir, then let it sit for 5 minutes to bloom.

In a large bowl, stir together the flour and salt. Add the water mixture, olive oil, and butter. If you're using a mixer, knead the dough using a dough hook for 5-7 minutes; if you don’t, knead the dough on a slightly floured surface for 10-15 minutes. The dough should become smooth and pillowy.

Shape the dough into a ball and place it into a bowl, and cover with cling film. Leave for 1 hour.

Punch down the dough, and tip it out onto a lightly floured surface. Using your hands, flatten into a large rectangle (try not to make it too thin; you want it to be a little thick). Sprinkle the grated cheese to cover the surface of the dough, then repeat with the spring onion and jalapeno.

To roll up the dough into a log, grab one of the horizontal sides and carefully curl it over itself to create a spiral. make sure you don't pull the dough too much. Try to be gentle when rolling it up. Once you have a thick log, then grab a knife and slice it into 3-inch pieces. Place the pieces onto a baking tray lined with baking paper; it truly doesn’t matter if they are touching or not, as long as they are not bunched up, they need a little room to grow. Cover with cling film and leave to rest for 30 minutes.

Preheat the oven to 425F

Bake the buns for 30-45 minutes until golden. Immediately after they come out of the oven, drizzle with honey :)
