cherry brownies
Brownies are easy to pimp up and add your favourite flavours to. I like to use a good base recipe and add any extra chocolate I have on hand, as well as any random fruit or maybe something crunchy, like pretzels. If you get bored with basic chocolate brownies, just have fun with it and try something different!

1 cup of frozen or fresh cherries, de-pitted
2tbsp brown sugar

140g butter, melted
200g sugar
2 eggs
115g milk chocolate, melted
100g flour
2g salt
25g cocoa powder
175g chocolate chips (whatever kind you like)
method
Preheat the oven to 350F. Line a 9x9 baking tray with parchment paper or a standard cake tin; the shape honestly does not matter.
Blend the cherries in a blender or food processor to make a purée. Pour the purée into a small saucepan and add the brown sugar. On medium heat, bring to a boil and reduce until it turns slightly thick. You’re just cooking out some of the water to create a more intense flavour.
Place the saucepan in the fridge to take the heat off it. (It’s okay if it’s still warm when you're using it later, we just don’t want it super hot.)
Whisk the melted butter and sugar in a large bowl for about 1 minute, until they become homogeneous. Add the eggs and melted chocolate, whisk together so the mixture becomes slightly thicker.
In a separate bowl, whisk together the flour, salt, and cocoa powder.
Add the dry ingredients to the wet. Switching to a spatula, fold in the flour until 50% mixed, then add in the chocolate chips. fold everything together to create a thick batter with no streaks of flour or chocolate.
Pour the batter into the prepared baking tin. Dollop the cherry puree on top to create pools. Use a spoon to create the wispy top, and drag the spoon through the cherry mixture to half mix it into the brownie top.
Bake for 20-25 minutes, until the top is set and a crust forms. Once the brownie is out of the oven, sprinkle with some extra salt :)
For the melted chocolate - place in a small microwave-safe bowl and microwave in 30-second intervals until melted.
