leek & apple sausage rolls

we have party size and snacks size!

1 packet of store-bought puff pastry

filling

800g ground pork

1 leek, trimmed, washed

1/2 granny smith apple, grated

30g breadcrumbs

2 tsp english or french mustard

1/2 tsp thyme (dried or fresh)

AT LEAST 2 teaspoons of salt & pepper

method

slice the leek down the centre, then again so you have 4 long pieces, chop. sweat the leek in a small saucepan for 5-10 minutes until it has cooked down and become slightly sweet, let cool.

squish together the ground pork, leeks, grated apple, bread crumbs, mustard, thyme, salt and pepper.

roll the pastry out to a thin rectangle, form a log with the filling along the edge of the pastry, leaving a 1cm edge brush with egg wash. roll the log over its self, to encase the filling with pastry, seal and trim the edge, repeat with the remaining pastry and filling.

preheat the oven to 400F.

for snack size slice into 3inchs, egg wash, bake for 30-45 minutes.

for party size slice into 1inchs, egg wash, bake for 20-25 minutes:)
