sprinkles cake

sooo the thing about cake is that if you don’t have a recipe and just want something simple, weigh out three eggs, take that weight to use for the rest of the ingredients butter, sugar, flour (self-raising). that’s all it takes to make a pretty basic cake, just don’t forget to add a little vanilla!

175g softened butter

175g sugar

175g self-raising flour

3 eggs

1tsp vanilla

2tbsp milk

whipped ganache

125g milk chocolate, chopped

180g whipping cream

method

preheat the oven to 375F. grease a 9” cake tin (shape doesn't matter).

in a stand mixer, beat the butter and sugar together until pale and fluffy, add the vanilla and eggs, one at a time with 1tbsp of flour for each egg addition, beat until combined. sift the flour, then mix into the batter until just combined, fold in 2tbsp of milk. pour the cake batter into the prepared tin, smooth off the top. bake for 20-30 minutes, let cool.

bring the cream to a boil in a small saucepan, have the chocolate ready in a bowl once the cream is boiling, pour it over the chocolate, stir until smooth, leave in the fridge for 4-6 hours or overnight.

once cool, whip the ganache to soft peaks.

spread the ganache over the cooled cake, top with sprinkles:)
