blood orange loaf cake

first time I’ve ever put whipping cream into a cake batter before, but like I don’t hate it, the cake is super moist, soft, light. it honestly has quite a good structure.

blood orange is one of my favourite flavours. they have this amazing tanginess and beautiful colour, plus the zest is a perfect perfume for cake.

recipe from the boy who bakes

150g butter

300g sugar

zest from 2 blood oranges

3 eggs

300g flour

2tsp baking powder

pinch of salt

200g whipping cream

syrup

100g blood orange juice (about 4 oranges)

100g sugar

method

preheat the oven to 350F, line a loaf tin with parchment paper.

beat the butter, sugar, and zest in a stand mixer for about 5 minutes until pale and fluffy. slowly mix in one egg at a time until fully combined.

using a spatula, stir in the flour, baking powder, and salt, then mix in the whipping cream to form a thick, smooth cake batter, pour the cake batter into your tin, smooth the top, bake for 40minutes to an hour. to test when its done stick a toothpick in the centre of the cake if it comes out clean then the cake ready.

while the cake is baking, bring the orange juice and sugar to a boil in a small saucepan, take off the heat once all the sugar has dissolved.

once the cake has finished baking, poke the entire surface of the cake with a toothpick, then pour over the syrup, let soak and cool.

serve with some lightly whipped cream:)
