lemon possets

so a lemon posset is just cream, sugar, and lemon juice. the acid in the lemon juice makes it set. it has a kind of panna cotta texture, but without using gelatin.

these possets have a light, soft lemon flavour, and are delicately smooth, just the kind of dessert you want in the summer. you don’t have to just use lemon any citrus fruit would work.

ingredients

300ml whipping cream, 35% or higher (the highest percentage you can find)

75g sugar

65g lemon juice, about 2 lemons

method

place the cream, sugar, and zest from 1 lemon into a saucepan over medium-high heat, bring to a boil. once the cream is boiling remove the pan from the heat and stir in the lemon juice, it will thicken slightly. pour the liquid into glasses, ramekins, bowls, whatever you like, leave in the fridge overnight to set.

serve with extra whipped cream and seasonal fruit:)
