peach & thyme galette

so i didn’t have any cornstarch so i used custard powder instead and it kinda worked!

pastry

200g flour

1tbsp sugar

pinch of salt

140g butter, cold, cubed

6 tbsp cold water

filling

4 peaches, sliced

55g brown sugar

2 tbsp lemon juice

1 tbsp custard powder or cornstarch

1 tbsp thyme leaves

pastry

combine the flour, sugar and salt in a large bowl, using your fingertips rub the butter into the flour so they become pea-sized pieces. using a blunt-edged knife stir in the cold water until a shaggy dough forms press the dough together into a disc (dry patches are okay, just don’t overwork the pastry). place in the fridge for 1 hour.

filling

in a bowl combine the peaches, brown sugar, lemon juice, custard powder, and thyme leaves, set aside.

preheat the oven to 375F, line a baking tray with parchment paper.

on a lightly floured surface, roll the pastry out into a large circle. sprinkle 1-2tbsp of almond flour onto the base of the pastry (this helps prevent a soggy bottom). leaving a 1inch border, spread the peaches out on the pastry, fold the excess pastry on top of the galette.

chill in the fridge for 30 minutes.

brush the outside of the pastry with milk, bake for 30-40 minutes, until the pastry is golden and the peaches are soft. (during the last 5 minutes of baking brush the pastry with a little bit of honey)

serve hot or cold with ice cream:)
